We use stainless steel tanks for the vinification process. The Montepulciano graoes for our Cerasuolo rosè wine are harvested earlier than those for our red wines and they undergo a cold maceration in order to achieve the characteristics we are seeking and to extract the grape’s primary aromas. This is followed by a fining and stabilizing in stainless steel once again at a controlled temperature no higher than 20°C. Sulphur dioxine is used in minimal doses
